  • Oil or Ghee: For greasing the idli molds
  • Water: For steaming

  • Grated Coconut: For garnishing (commonly used with coconut chutney)

Instructions

  1. Rinsing and Soaking:
    • Wash idli rice and urad dal separately under running water.
    • Soak idli rice in ample water for 4-6 hours.
    • In a separate bowl, soak urad dal and fenugreek seeds together for the same duration.
  2. Grinding the Batter:
    • Drain water from soaked urad dal and grind it to a smooth consistency using minimal water.
    • Grind soaked idli rice into a slightly grainy texture.
    • Combine both batters, add poha if using, and mix well. Add salt and allow the batter to ferment overnight or for at least 8 hours.
  3. Steaming the Idlis:
    • Grease idli molds with a little oil or ghee to prevent sticking.
    • Pour ladlefuls of the fermented batter into each idli mold, filling them about 3/4 full.
    • Steam for 10-12 minutes on medium heat until a toothpick inserted into the center comes out clean.
  4. Serving:
    • Allow the idlis to rest for a couple of minutes before gently scooping them out using a spoon or flat spatula.
  5. Optional Garnishes:
    • Garnish with fresh coriander leaves or grated coconut if desired.
