Preparing the Batter:

    • Wash brown rice, urad dal, chana dal, and fenugreek seeds separately under running water.
    • Soak brown rice and fenugreek seeds together in ample water for 6-8 hours.
    • Soak urad dal, chana dal, and poha together for the same duration.
  2. Grinding the Batter:
    • Drain the water from soaked brown rice and fenugreek seeds. Grind them into a smooth batter using minimal water.
    • Drain the water from soaked urad dal, chana dal, and poha. Grind them into a smooth batter, ensuring both batters have similar consistency.
    • Combine the brown rice batter and urad dal-chana dal-poha batter. Add salt and mix well. Allow the batter to ferment for 8-12 hours or overnight.

Making the Brown Rice Dosas:

  1. Preheating the Dosa Pan:
    • Heat a non-stick dosa pan or griddle over medium heat. Once hot, reduce the heat to medium-low.
  2. Greasing the Pan:
    • Grease the pan lightly with oil or ghee.
  3. Pouring the Batter:
    • Pour a ladleful of the fermented brown rice dosa batter onto the center of the pan. Using the back of the ladle, spread the batter in a circular motion to form a thin dosa.
  4. Cooking the Dosa:
    • Drizzle a few drops of oil or ghee around the edges of the dosa. Allow it to cook until the edges start to lift and the bottom turns golden brown.
  5. Flipping the Dosa:
    • Gently flip the dosa and cook the other side for a brief moment until it’s cooked through.
  6. Repeat:
    • Repeat the process with the remaining batter, greasing the pan as needed.
